Stir-Fry Beef and Celery with XO Sauce

Stir fry dishes are a no brainer for a weekend night dinner.  I usually choose a meat such as pork or beef and a veggie such a bok choy or broccoli… and voila, you have a dish.  You can either whip up a simple brown sauce (oyster sauce, sugar, cornstarch and water) or use store-bought black bean sauce to tie the ingredients together.

A stir fry I like to make on a weeknight is this Beef and Celery with XO Sauce.  The XO sauce brings so much flavour to the dish and the beef cooks in a jiffy.

Stir Fry Beef and Celery with XO Sauce

250g beef for stir-fry, sliced (such as flank steak)
3 stalks of celery
1 clove of garlic
3 tbsp XO sauce
olive oil

Marinade
1 tsp light soy sauce
1/4 tsp sugar
1/2 tsp cornstarch

Slice the beef into thin slices. Mix the light soy, sugar and cornstarch with the beef and marinade for at least 30 minutes.

Cut the celery into 4″ long strips.

Heat 1 tsp olive oil in a wok over medium high heat and add the celery and toss. Add 2 tbsp of water and continue to cook until the celery is cooked and the water has evaporated. Remove the celery from the wok.

On high heat, add 1 tbsp of oil into the wok. Add the garlic and the beef and stir fry until the beef is 90% done. Then add the celery and the XO sauce and toss.

Serve and enjoy.
