Plump and juicy nectarines (or peaches) are good the way they are. But stewing or baking them until they are soft and bursting with juices takes it to another level. Add vanilla ice cream to cooked nectarines, and you will be in heaven ~ the perfect summer dessert.
This decadent recipe is adapted from Jamie Oliver’s 30 Minute Meals, so it is guaranteed to be simple enough to prepare even for a weeknight dinner!
Stewed Nectarines with Vanilla Ice Cream
Serves 2
6 ripe nectarines*
1/2 tsp vanilla extract
2 tbsp of golden caster sugar
1/2 orange
1 cinnamon stick, snap in half
tub of vanilla ice cream (I used Häagen-Dazs)
Preheat the oven to 200°C.
Halve the nectarines, remove the pits and place in to baking (or roasting tray).In a small bowl, grate in the zest of the orange, then mix the vanilla extract and the juice of the orange.
Sprinkle the sugar over the nectarines, pour in the orange-vanilla mixture and add the cinnamon.
Place the fruit in the oven for 15-20 mis or until they are soft and juicy. Set aside for them to cool down.
In 2 glasses, serve the fruit layered with vanilla ice cream.
*You can use peaches and plums as well
