Penne Arrabbiata

I love spicy food and I love pasta, how could I not love a good Penne Arrabbiata?

This simple pasta dish has so few ingredients, it’s something that most people can pull together without having going to the market: tomatoes, garlic, chilli peppers and olive oil.

Arrabbiata means angry in Italian and is named for the spiciness from the chili peppers.

If you are in for a spicy adventure and short on time to make dinner, give the following Penne Arrabbiata recipe a try!

Penne Arrabiata
Serves 2

2 tbsp olive oil
1/2 tsp red chili flakes (less if you can’t handle heat)
500 mL chopped tomato, canned
3 cloves garlic
2 1/2 cups penne rigate
Salt and pepper

Fill a saucepan with water and bring to a boil. Add salt and the penne, cook until al dente. Make sure it has a bite to it, otherwise, the pasta would be overcooked after adding it to the sauce. Drain the pasta.

Heat the olive oil in a large pan or skillet over medium heat. Add the minced garlic and red chili flakes and sauté for a minute. Don’t let the garlic turn brown.

Add the tomato sauce and simmer uncovered for 8-10 minutes allowing the excess water evaporate. Reduce the heat to low and cook for a few more minutes, stirring occasionally. Season with salt and pepper.

Add the pasta to the tomato sauce and stir.

Serve and garnish with some parmesan cheese if you like.
