Inspired by the use of watermelon in a savory dish I had at Gogyo recently, I decided to make a watermelon salad today. This summer salad recipe with mint, red onions and feta is both savory and refreshing.
Hubby cringed when he saw that I used the watermelon in a salad [he has a thing with fruits in savory dishes], but personally I couldn’t stop eating it! Combined with a light sandwich, this was the perfect summer lunch for me.
Summer Watermelon Salad
4 cups of watermelon, cut into cubes
1/2 small red onion, thinly sliced
1/4 cup lime juice
1 tsp sugar
1/4 cup fresh mint, roughly chopped
50g feta cheese
1/2 tsp extra virgin olive oil
salt and pepper
Cut the watermelon into 1-1 1/2″ cubes. The watermelon should be chilled.
Thinly slice the red onion. Mix the sugar into the lime juice until dissolved. Pickle the onions in the lime mixture for 20 mins.
Gently combine the watermelon, mint, red onion mixture in a bowl. Drizzle with olive oil and season with salt and pepper.
Crumble the feta cheese over the salad and serve.
